Worthy’s Baked Rhubarb Glazed Chicken

What You Will Need
Ingredients
- 4 chicken breasts (bone-in, skin on)
- 1/4 Cup Worthy Vanilla Rhubarb Jam
- 2 tbsp balsamic vinegar
- 1 tsp dried thyme leaves
- 1/4 tsp salt
- 1/8 tsp pepper
- Serve with steamed rice
Utensils
- 1 Set of Measuring Tools
- 1 Baking Sheet
- 1 Roll of Tin Foil or Non-stick spray
- 1 Small Saucepan
- 1 Basting Brush
- 1 Meat Thermometer
Directions
Step 1: Preheat oven to 400°F.
Step 2: Line a baking sheet with foil and lightly oil or coat it with nonstick spray.
Step 3: Season chicken with salt and pepper on both sides, then rub each breast with ¼ tsp thyme under the skin.
Step 4: Place bone-side up, and skin-side down, in a single layer on a prepared baking sheet and roast for 20 minutes.
Step 5: In a small saucepan, heat Worthy’s Vanilla Rhubarb Jam and balsamic vinegar over medium-low heat until the glaze is melted.
Step 6: Turn chicken meat-side up.
Step 7: Brush under the skin and over the skin with jam glaze.
Step 8: Continue to roast, brushing twice with the remaining glaze, until the chicken is cooked through, and the meat thermometer reads 165°F (about 20 minutes more).
Step 9: Serve with steamed rice.
Step 10: Enjoy!
